With Pancake Tuesday coming round, I think it is the perfect opportunity to share my favourite pancake recipes for weaning babies.
I love all kinds of Pancakes, from sweet to savoury - they’re soft and fluffy… what’s not to like?! For babies, it can be hard to think of ways to introduce new foods and pancakes are the perfect snack, breakfast or dessert for your little one. My youngest Bailey loves pancakes! They are the perfect snack, especially with some mashed up fruit.
Bailey is now two and a half years old and I can honestly say these baby pancake recipes are a huge hit! I know how hard it can be feeding kids, but weaning babies can be even harder. When you are starting with such a small selection of foods, it can be difficult to come up with easy and nutritious meals for your baby.
The first recipe I have in mind is the two ingredient pancakes. I love this recipe due to the fact it is quick, super easy and doesn’t require many ingredients! To make these pancakes, I use bananas and eggs - two ingredients I usually have at home.
Because I am a mother of three, it can be difficult to make meals that appeal to my oldest and youngest. However, pancakes are definitely the solution! Making them the perfect food for baby weaning but also great for my oldest, Minnie, with some fruit or nutella (on the odd occasion).
To make these pancakes, you can use any type of banana, however I think it is best to use a very ripe one, as they are easier to mash and taste sweeter - which make the pancakes more appealing for your little ones. It also means that the recipes need no added sugar or sweetners, keeping them both healthy and nutritious for both babies and children.
For ingredients, you will need one ripe banana and one egg - along with some butter or coconut oil for frying.
- Mash the banana, then beat the egg in a separate bowl with a fork. Add the banana and mix until well combined. Or if you're lazy, you can pour the mixture into a blender for a few seconds!
- In a frying pan, heat up a small butter or coconut oil over medium heat. To make each pancake, add one spoonful of the mixture. It will depend on the size of your frying pan but at the same time you should be able to cook around five pancakes.
- Fry on either side for about 2 minutes, or until the pancakes start browning. Then serve with some chopped fresh fruit straight away.
This recipe in particular, will make approximately ten mini pancakes - but you can easily double or triple the quantities.
You can also use the recipe, but add oats to make it a little bit more substantial and filling for your baby. Oats are a great source of protein, and complex carbs that gradually release can help fill small tummies up. To make these pancakes, take the same recipe above (one banana and one medium egg) and add 25 grams of oats (I use normal porridge or rolled oats in this recipe).
- Mash the banana in a bowl first, and then mix in the egg. Then add in the oats and blend in as well.
- In a large frying pan, heat up a little coconut oil or butter and then add the pancake mixture.
- Use 1.5 tbsp of the mixture to make one pancake - meaning this recipe will let you make five pancakes in total.
- Fry for two minutes on either side until golden brown.
My Top Tip: If your child doesn't like much texture in their food you can first pulse the oats in a blender or food processor. Despite visible bits of oats this will make the batter even better. For more flavour, you could also add a dash of vanilla extract, or finely dice some berries.
Last but not least, my favourite pancake recipe are these oat and apple-based baby pancakes. Providing your baby with much more energy than a traditional pancake. These pancakes in particular are quite filling and are much more dense - but my kids have never complained.
To make these delicious pancakes, you need 150 grams of rolled oats, 150 grams of apple puree, 1 tablespoon of baking powder, 0.5 tablespoon of baking soda, 1 tablespoon of vanilla extract, 120 millilitres of milk (or a non-dairy alternative)… and if you are feeling adventurous, 1 tablespoon of maple syrup.
- Place the oats in a food processor and blast until fine
- Add the remaining ingredients and blend until smooth (this mixture is thick!)
- Drop spoonfuls onto a greased medium heat pan
- Flip the pancakes when bubbles start to form, then burst on the surface
- Allow the pancakes to cool, then serve.
